The role of the Next Level is to source some of the worlds most rare and unique coffees. Truly next level flavours.
Delicate, complex, silky, smooth body
This month: Ethiopia – Boji village – washed - Yirgacheffe (non organic*)
*We are constantly hunting for exceptional “Next Level” coffee flavours and when we find them, we are excited to share it with you. Next Level coffees are difficult to find, therefore, it is our only product that may occasionally be sourced from a non-certified farm. This does not necessarily mean that the coffee is not organically produced, the producers sometimes may not have the means to fund the certification process or may work in other sustainable ways. Either way, we will always work with like-minded producers that share our values of being good to our planet and people as well as share our passion for quality coffee.
Producer Boji village small family farms
Varietal – 100% heirloom
Process – Washed
Profile – delicate fragrance and flavour of blueberry, silky smooth body, clean finish of sweet almond and ginger
Boji is a small village in Kochere. Kochere is a sub-region of Ethiopia's famous Yirgacheffe coffee producing area. Producers grow heirloom varieties and practice traditional methods in their small "coffee gardens."
The Boji mill process washed, honey and natural coffees. Altitude is high and the climate chilly which ensure slow maturation of fruit and enhancement of complex flavours. Site managers, Lema G and Meskel have a wealth of experience and the site is very well managed. At the Boji washing station, fully ripe cherry is submitted to the mill, where the coffee is depulped, fermented in concrete tanks for 48 hours and dried on raised beds which allows for clarity of flavour and a clean cup.
